7.75” Gyuto (Dirty Mild/Wrought Iron)

$570.00

7.75” Gyuto

As I was forming the initial billets to make this batch of knives, I realized I had one last piece of wrought iron for cladding, and one last piece of dirty mild. So I figured I’d try a knife that has both! Mild is on the stamped side and wrought is on the other.

“Dirty Mild” refers to a process I came up with that involves purposely deforming layers of mild steel and forcing an inclusion mixture into these gaps that when polished reveal a soft grain texture that’s subtly reminiscent of wrought iron. Within the layers of mild steel I’ll also incorporate some layers of wrought iron to help create more character.

The geometry leans more workhorse and feel sturdy and smooth. Bevels are flattened on abrasives and stones, polished on Mikawa and Oouchi natural stones and then finished with finger stones.

The handle is made of Ziricote, Ivory Micarta, and Lemonwood, that unintentionally feel very fall-like and of the season.

On the butt of the handle, there’s a stamp of a frog on a lily-pad; a frog for my mom and a lily-pad which represents peace through adversity.
