8” Funayuki Gyuto
The cladding here is mild steel layered with 15n20. It didn’t polish on stones/with finger stones as dark as I thought it might so I satin-finished the bevels and created haze with some very thick natural stone mud.
The faces were forged fairly thin, with a gentle hollow that’s most pronounced at the heel. I’d classify the cutting feel into workhorse territory, while still being smooth and comfortable.
